Using some manipulations on placing the order it's possible to keep the website store update with any product available qty. If it's online checkout or offline it's possible to substract the ordered qty per product from the corresponding item available stock. It would depend if it's online or offline payment method to provide the final quote but min is $50 for offline and $180 for online method.
For example, shopkeeper can use offline payment but admin needs items qty decreased after each order placed. This is customisation will cost $50.
Another example, shopping cart based on Foxycart can use online payment methods and send a data feed on successfull payment. Checking this data feed and looping throught the product with it's options ordered it's possible to customise the stock update not only per 1 prodcut but also for it's options. Even if the foxycart product is organised as a one modx document and options are strored as tv it's still doable to check the update after payment. This example customisations costs will start from $180.
Usually websites have both online and offline methods, so in this case both customisations needed. Cost $50+$180.
